Fish tacos

Grilled up some blackened fish tacos and rice with some hatch Chile sauce and a little sriracha.

Those look great!

I make them myself sometimes - they are pretty forgiving if you have some fish that aren't as high quality, or are older and no longer as clean-tasting. I made some fish tacos out of some Spanish Mackerel from the gulf that we caught last week and needed to be cooked or frozen.

If folks are looking for some seasoning ideas, almost any sort of seasoning that you'd use for Latin-type food will work. I bought a Carne Asada seasoning that worked great, and just rubbed it on the fish fillets and dropped them into a hot skillet with oil. Best part about it is that if you break up the fillets while cooking, it doesn't matter, because they get broken into pieces in the taco anyway.
