This evening I thawed a backstrap from my Christmas eve 10 point. I marinated in a Jack Daniels steakhouse marinade, wrapped it in thick cut apple bacon and cooked it just to medium. My family destroyed it. I'm proud to be able to do that.

That sounds awesome. We grilled one New Years eve and my sister in law even liked it. She doesn't do wild game hardly at all.

Sounds great . I have been marinating my ham
steaks a couple of days and then I take them out sprinkle McCormicks tenderizer on both sides put in baggie for another couple of days in the fridge , boy are they tender .
I cook them to about a medium as well . Goes well with bell peppers and onions skewed .
