I was watching O'Neil Outside Saturday and he made some catfish fillet sandwiches that looked really good, quick, and simple. I didn't have any catfish so I used the recipe on crappie. The "dry rub" is equal parts oregano, paprika, crushed red pepper, salt, and black pepper. Get skillet hot with a coating of olive oil, put dry rub on both sides of fillet, pan fry, flip, pan fry other side, put on a hoagie bun, and enjoy. Some cole slaw would be good on the sandwich, but I didn't have any. It will be pretty spicy. If you don't like spicy cut down the amount of crushed red pepper. I'm sure we've all tried a similar version of this, but thought I would share.
