    Tried the backstrap with the bleu cheese butter, AWESOME. A guest who doesn't like bleu cheese tried it and thought it was great. I followed the recipe, doubling the cheese and using 2 sticks of butter, but one would have been enough. Definitely worth trying.

    I would agree with AlabamaSwamper. Younger hogs are absolutely my favorite but I have had old boar and wasn't thrilled with it. I have also had corn fattened, in a pen, wild boar and it was hard to tell the difference from it and domestic.
