I've had a single Venison kidney sitting in my fridge since the 22nd. On Tuesday, I placed it in a bowl of cold water and let it sit over night. Then I brought it to our neighborhood bar chef who is fond of cooking Offal for us. We waited longer than usual, but almost two hours later, a plate of tacos comes out of the kitchen.

Pretty good. Slightly chewy, but more than manageable. They had a bit of a liver taste, but that taste would never really develop much in your mouth beyond the initial taste (liver tends to increase). The first couple of bits had a distinct Offal after taste, but once my palate came to expect that, I didn't taste it much anymore. We all enjoyed it.
