My Great-Aunt Thelma used to make these...she'd use those big ole JFG mayonnaise jars and have them in the fridge for us rugrats. Said it helped 'save the cans for winter'...meaning the jars of misc. veggies from her garden.
She was an 'old maid' and was always "putting up for hard times"...seeing as she'd lived through the Depression and never had much before or after it either. A full 8 years after she passed, when my cousin was renovating her house - he found a secret stash of canned goods of hers...so, she did have enough to see her through!
Fridge Pickles
8 - 12 cucumbers, sliced thin 4 cups sugar 1/2 cup salt 1 1/2 tsp. mustard seed 1 medium onion (to each jar-more onions for big jar or to your fancy) 4 cups white vinegar 1 1/2 tsp. celery seed
Put cucumbers and onions in jar. On stove, heat the sugar, salt, celery seed, mustard seed, and vinegar - just until that sugar melts good While still hot, pour the mixture over the cucumbers & onions filling that JFG Mayo jar Now just put the jar in the fridge - and eat when cool.
