As some of you may know, I do a little freelance catering. I have been retained to do a lawn event tomorrow night. That's basically a fish fry for about 20-25 people. Here's the menu.
Appetizers: Crawfish boil with sauce picante 1st course: Shrimp and pork jambalaya, just a taste or two. Salad course: Tossed garden salad Entree: Fried bream fillets, hush puppies, fired and/or mashed potatoes, fried green onions, sliced garden fresh maters, sliced vidalia onions. All served with a choice of dipping sauces and lemon wedges.
Desert: Choice of carrot cake or lime sherbet.
Drink choices: Tea, water, tea or tea.
I start cooking about 3 tomorrow.
My charge: heh, heh, heh. But you should see the rack on my serving wench.

Ill get the pics tomorrow when she comes to work.
If she comes to work.
Easy on the eyes but not real dependable. $12.50 an hour for four hours, doesn't even get her breathing heavy and tips...no, not a typo, may be double that. She can clear well over $150 if she breathes just right. He11, I may give her a 10-spot.
Yes, women, you are right. It is sexist. But the fish and crawperch are worth it.
I just wish she wasn't crosseyed.

LOL- Reckon how many folks on here even know what a 7-spot is.
I mean besides Tubs who knows the guy that invented them and has probably fished with him.

bowriter, You got a recipe for that jambalaya? I had a great one but lost it in a move.
None of the ones I have found since are worth squat.

None of the ones I have found since are worth squat.
I do. But it is a "from scratch recipe" starting with roux. Let me clue in to a secret only me and the coonasse on here know. Zatarain makes a boxed mix that is almost as good and a whole lot easier.
But: start with olive oil and butter melted and melded. Add a little flour and stir until it is the color of a penney.
Add chopped red onion, chopped green onion, chopped celery and chopped bell pepper. Add some chopped or minced garlic. Start that all browning in the roux. Add your chopped sausage and chopped pork if you are using it and brown. Now add your seasonings, salt, pepper, some cayenne and one can of Rotel tomatoes and green chillies. Stir well. Add the rice and stir in and add chicken or fish stock. Bring to boil and add shrimp, return to boil for 3-5 minutes. Remove from heat and let steep for at least 30 minutes. Taste for seasoning adjustment. I also add a healthy dollop of worchestershire sauce to mine.
Since I don't measure anything, I can't give you exact amounts.

i always have read & do make my roux with eqaul amounts of flour/oil,that amount for a large pot is 1 cup each,mike243

It went very well. The wench did indeed show up and I have pictures. I am having trouble getting the Olympus to download properly but will, at some point, post pics. They pretty much ate everything including some lawn furniture. The host was well pleased.
I did hear one guest say, "Dang, woman, Emerson"
