How long does it take for them to start bearing fruit?

Or what fruit tree bears fruit (that deer eat) the fastest?

Takes about 5 to 6 years for the Persimmons to start. They will obviously get more productive the older they get. I believe they have around a 60 year life expectancy.
Im not sure what fruit tree is the fastest.

pears, apples, crabapples, and wild plums are all great ideas for soft mast producing trees for wildlife. They also are all early fruit bearing trees (if planted as seedling). Most such fruit trees can bear fruit within 2-3 years if planted as a 3 foot tall seedling. Pears adapt well to a variety of soils, and apples have to be planted in clearings free of shade and woody competition. These fruit trees also begin dropping fruit in the fall (mid november. There are a number of varieties of each some of which are more desireable for wildlife plantings than others, especially in southern states.

Also sawthooth oak are a tree that produces early and abundant mast. A 5-7 year old sawtooth oak can be expected to produce abundant large acorns. they also dropp their fruit earlier than other oaks.

I believe persimon usually begins fruiting around 5-7 yrs.

Keep in mind that there are male and female persimmon trees and only the females will produce fruit. And you can't tell them apart until they are old enough to begin producing (5-7 years old).
