Doesn't get any easier than this.

Basic ratio:
2 tomatoes
1 onion
1 bell pepper (red or yellow will help keep the salsa red)
1 jalepeno (to start with)
several cloves of garlic

Boil them whole until fairly soft


Blend


Add chicken cubes to taste


The good thing about the blender is that it allows you to season and add jalepenos to taste.

Like any good taqueria salsa, serve hot.

Looks good. Instead of boiling, I roast everything in the oven until the skins start to brown and then dump in the blender. Sometimes, for a change of pace and a different flavor, I will fire roast everything on the grill. I like my salsa pretty spicy, so I will also use a serrano and/or some chiles de arbol.

Cool - definitely going to try this with some garden veggies this year. My kids will actually eat salsa, even if they won't touch onions/peppers otherwise.

I put the tomatoes in last since they take the least amount of time, but I'd say about 10 minutes from start to finish. I check the garlic or onions to see if they're softening some.
