Sauteed amaranth greens, that is. Also known as redroot pigweed. If you've gardened or farmed the same piece of land for several years, you know what I'm talking about. I've been eating it every day for the last week or two and haven't gotten tired of it yet.

Here's what a row of squash looks like before cultivating.


A gallon of leafy greens only takes few minutes to pic.


Washing them and spinning them takes a little longer.


Sautee with in a little bacon grease (or butter) with onions, bell pepper, and garlic.


It only takes a couple of minutes to sautee in a skillet.


The kids will eat bowl after bowl. They're turning in to little "pigweed pickers" really quickly. \:D

Good stuff. I've been making it a point to eat leafy greens with every meal. I'll often do sauteed greens and boiled eggs or sauteed greens and venison sausage for breakfast.

I hate the stuff but never have tried eating it. Most of what I've dealt with is the spiny pigweed which you can't pick with bare hands.

This is it, carman. It get spiny when it goes to seed. Most of what I'm picking is 6" tall.

Poser, I've had it mixed in scrambled eggs with salsa the last two mornings.

Fresh salads are great, too. It's way too hot for any lettuce or spinach and I don't have any chard since I started eating this a few years ago.

Looks great. The only pigweed we have around now is Palmer. It is Round-Up resistant and has cost the farmers millions to control.

Wonder if it is also edible?

Hawk, most of mine is actually Palmer. I'm not sure if calling it redroot is actually accurate or not, that's just what I've always called it. It's definitely edible. There have been rumors that Palmer isn't edible once it becomes round-up resistant, but researchers have dispelled that myth.

I've only sprayed mine once or twice over the years specifically because I don't want it to become resistant.
