I don't completely understand it, but I've heard at least two different doctors who preach (and practice) wellness through nutrition that olive oil changes on a molecular level when heated and becomes almost as unhealthy as 'standard' vegetable oils.


Interesting. Might as well just use vegetable oil.

I've gotten to where I cook with butter. Is it better than any of the oils? Probably not. But at least it's not margarine!

I use coconut oil a lot, but butter, bacon fat and pork lard, too. Coconut oil and butter mixed together is good, too.

Add duck fat to that list. Awesome for new potatoes in the skillet or popping popcorn in a frying pan.
