This came out great! We made a marinade of Soy sauce, Chinese 5 Spice, Red Pepper, sherry vinegar (very critical), ginger and honey. The legs and wings were roasted in the over for 30 minutes. Skin side up for 15, flipped and brushed with duck fat for another 15.

The breasts were seared in duck fat for 4 minutes (2 on each side) and then the vegtables were sautéed in the deglazed pan with some extra duck fat added. Breasts were sliced and added to the vegtables, wings and legs eaten with fingers.
Excellent meal! Borderline amazing, actually.

Why is the vinegar critical? Will rice wine vinegar suit just as well? How about some sesame oil?

Anything Asian is fine, but we have found that Sherry Wine vinegar compliments duck extremely well.

WOW! That looks great. Will save this recipe.

Mergansers have a reputation around here as fish ducks and I don't recall anyone cooking one until now. That may change.

Here's my thoughts with regards to duck hunters and diver ducks: Obviously, you can get a lot of variation with ducks depending on where they live and their diet. In Hank Shaw's book, he refers to this a "Terrior", a word often reserved for wine in relation to the earth that it grows in. I've eaten a number of diver ducks in this part of the country and, honestly, I've yet to have one that is "fishy". Some of them have certainly been "ducky", but fishy is not a word that comes to mind.
I do not think that diver ducks truly get "fishy" until they hit the coast and start to eat crustacean-rich diets.

Why the reputation? The ducks themselves do smell like fish. Hunter kills duck, hunter picks up duck, hunter smells duck, hunter says the duck smells fishy, hunter concludes that the duck must taste fishy. Freshwater fish smell "fishy, too. As an experiment, we recently seared a pair of Gadwall breasts with nothing but salt and pepper. The result? "Ducky", but hardly "fishy." It really wasn't bad at all, though the meat certainly could have benefited from a marinade.

And that's just the thing with duck (and a lot of other wild game): It takes some work to get from the field to a tasty meal. In the case of ducks and game birds, it may start with plucking them out and it may end with a marinade. The majority of the ducks I have cooked and eaten have been divers: Gadwall and Shovelers, mostly. On the rare occasions that I have had mallard, I have usually tried to do something with the whole bird like smoke it. Wood duck is probably my favorite, but divers, unless you live on the coast, shouldn't be discounted as they make for excellent tablefare. My wife for example, is not the biggest fan of freshwater fish. She'll eat bass, crappie and catfish that I bring home, but it is far from her favorite as she much prefers seafood when it comes to fish. She says that she is senitive to the the fish tasting like the water they live in. Given that freshwater fish is far from her favorite thing to eat, she enjoys eating these diver ducks, if prepared properly.

What you talking about grey ducks and hollywoods like that for? If it weren't for Gadwalls, I would have went hungry, when I lived in MS.

Gadwall and shovelers are not divers. They are dabbling ducks just like wood ducks and mallards.

The other thing about ducks is that there is probably not that much variety in their diet. They may eat more of one thing than other duck species, but they are all eating some aquatic insects and aquatic vegetation.

My mistake, I meant puddle ducks in that reference, not divers. I've heard many hunters refer to Gadwalls as "gagwalls."
