This was my best batch yet. Ive made 6 batches now over a couple years, the family and friends said this was by far the winner. I was using pepper-jack cheese, along with additional chopped jalapenos, but switched over to sharp chedder and kept the jalapenos too. Some additional spices completed this one.

I start with the High Mountain seasonig kit and then customize it from there. Let your imagination run wild. The only thing I have tried and didnt like at all was garlic cloves, while I love garlic, leaving the cloves whole was not a winner. Add cheese, peppers, onions, peppercorns, or any other seasonings you like. Most importantly, have fun and make it!

Looks like some high temp cheese. I've never tried the jalapeņos, but if you send me some.... I'll try it... \:\)

Actually, I dont use high temp cheese. I think its a waste of money to go that route. As long as you dont get much over the target temps of 156* it holds up pretty well.

I have cooked mine to 165* and the cheese is still in great shape. High temp cheese, in my opinion, is a waste of money!
