He makes some really good points, and some I don't completely agree with. The comment about washing away blood is the biggest one. The picture of his meat about to be ground is as pale as can be, a sure sign of soaking far too long.

But overall its some good info.

I agree about the color of his meat that is going into the grinder -very pale looking and has probably been soaking in ice water for too long. He does have some good points, though and, from my experience, you do almost have to yell at people to get them to consider changing their methods for a better end result. People get set in their ways and some of those ways just don't make any sense or are, by far, less than optimal choices with handling venison and they stick to them like its a religious practice rather than trying other ways.

Aint that the truth?? If one more person tells me you need to soak the meat for days and days to take the gamey taste out of it, Im going to blow a gasket.

Ha ha! I won't knock the guy for believing some of the same things I always heard (and did) in the late 80s, but I would recommend he compare the taste of a deer that's been feasting on a heavy acorn mast to one that's been eating primarily corn.

I don't soak my ribeyes in water until they're a pale white, I see no reason to do so with a deer. I'd much rather process right away. Can a deer in an ice chest even "age" under water?

I guess it depends on your definition of "age". Proper culinary definition, absolutely not.

you are correct Catman. The key is to keep your meat dry, and cold, not wet and cold. Packing it in ice is better than nothing, but if at all possible dont let water soak the meat. If your cooler is draining red water, its pulling blood and flavor out of your meat. \:\(

I used to soak my deer meat until it was light colored, not any more. I don't soak it in anything until the day before I cook it and then its in a marinade I throw together.

because it took 4 weeks or 57 days to get it processed lmao, if they keep it 3 weeks they can keep it forever imo, aging deer doesn't enhance the taste to me, rot it if you want to, but fresh is better for me

by the way, my deer meat has never tasted like hell. After a week in the fridge it's a bit more tender and still tastes good. Why would you want to drain the red juice out of that backstrap that you will make into med-rare steaks. BTW the red is not blood, it's juices from the meat containing a protein called myoglobin.
