I don't, but the point of the post is to fine out who does what and why. /really curious about strong opinions one way or the other.

I carry water in the truck to wash up with when gutting. I wash the blood from the cavity and the hams. If need be, I'll put a bag of ice inside the cavity and 1 between the hams. When butchering, if there are blood pockets on the ham or shoulder, I'll clean them in the sink and rinse. Usually do not wash back strap. But I don't think it is necessary to wash clean game meat before eating.

Nearly always, yes. Store-bought meat always gets rinsed because it's been sitting in God-knows-what for God-knows-how long. Vacuum packaged meats (large tenderloins in particular) have the red juice in there that leaches out. I rinse that off. Wild game still can have hair, dirt, or other contaminants on there….depending on conditions when you butcher the meat. Birds need to have their body cavities rinsed out. So basically, there is appropriate reasoning for simply rinsing off meat in cold fresh water, mainly so that you can control the last bit of water that goes on it. This is not to be confused with hosing a carcass off, dunking it in creek water, salted water baths, milk soaks, or other commonly held practices with regard to wild game preparation. That being said, not all meat requires a rinse, either.

However, it always requires some sort of dry-out method for good cooking methods. Steaks get patted dry, salted, then put in the fridge for at least an hour, or up to 2 days. Birds get hung so that the skin dries out.

I always do.

I use the same knife for pretty much all cuts on a deer, so contamination could be a problem with any part the knife cuts. Same with fish, the knife gets thrust through the stomach before they are filed. All meat gets tossed in ice water. I try to dry things as much as possible(while still keeping it cold) before packaging for the freezer...and pat dry before seasoning prior to cooking.

I rinse game meat such as rabbit and squirrel and pat dry. With fish I rinse and wash and partially fill bag with water before freezing. I do this because this is the way my grandpa taught me.

If I have to clean up an area (gut shot, etc.) I will fill a bucket with water and a very small amount of antibacterial soap and wipe down the affected area with a dampened rag, rinse, re-wipe until clean, then change the water and wipe the area clean. My personal rule of thumb, if we do have a deer that was gut shot, it gets skinned, quartered and chilled ASAP, I get the bad stuff as far away and as quickly from the rest of the uncontaminated deer meat to prevent any deadly bacteria from spreading during the hanging/aging process.
I also, make sure my cutting tools do not cross contaminate, if I am cutting the bad stuff away, that tool is used there until done, then washed in hot soapy water before using again somewhere else.

Most importantly, water will not kill bacteria, it just provides a better breeding ground and transportation method to other areas.

I don't rinse or soak big game although its seems to be pretty standard with wild boar. I soak small game and waterfowl in a bowl in the refrigerator overnight to get the blood out of the wounds. I also freeze small game and waterfowl in water to cut down on freezer burn.

There is no way you can fillet a mess of crappie and not get a scale or few on the fillets. I like to lay fillets in a deep pan and let the faucet roll them around to wash the scales out and over the top of the pan. No matter how hard I try, I can't get a deer ham from field to the butcher table without having a hair or two that I rinse off.
