I am somehow gonna get the time to go kill some snows this year. My goose cooking skill is pretty limited, having tred to broil some, fry others, all turned into a new form of Steel. You can use a single paper match to cook these things it seems like. Anyway, in anticipation of a mighty heavy cooler full of goose, some help/ideas/recipes would be very much appreciated.

We made smoked sausages and burgers out of them last year and they came out great. We used Hank Shaw's recipe for the burgers, and Jesse Griffith's recipe for sausages, documented here: http://gocarnivore.com/2013/03/28/snow-geese-sausages/

I have never actually tried any personally, but I've heard good things about goose sausage as well. I'd also wonder if it wouldn't be a good idea to cube a few up and include within a Cajun-inspired dish like gumbo.

I know someone who made goose jerky as well, but I don't remember how it came out.

Snow geese can be pretty "livery", even by my standards. The best recipes involve a combination of ingredients that neutralize that aspect. I'm not sure what it is, but the combination of ingredients such as brown sugar, coriander and nutmeg just "zap" the liver aspects of taste. the first time I ground a snow geese, I was suspicious when the smell of ground meat came out the other end, but after we hit it with the seasoning and ground it again, it was entirely neutral. Based on that, freelance experimentation should proceed with caution. -definitely involve spices from recipes known to neutralize the meat.

I have eaten my share of sky carp. The simpler the recipe the better. If you are expecting roast duck with the mango salsa, you will probably be disappointed.


Just slice, season and saute with some onions and eat them hot.

Have made gumbo with them and it was good, but you can put most anything in a good spicy gumbo and get away with it.

After a cold day chasing cripples in knee deep gumbo (not the good spicy kind). Breasting them out on a tailgate with frozen fingers and using a scrap piece of plywood to slice them on. You become very open minded about what is considered tasty. You chow down with your buddies gathered around a 55 gal. drum stove in a shop building and have a big time. At that moment it is the best thing you ever ate.
