Anyone ever use one of these? Thinking of getting one. Do they hold hear well or should I get a offset smoker?

For the money, they perform well. I know a guy who competes and even wins in BBQ comps using one. -not as easy to do big primal cuts as on a offset, but can still be done. I'd categorize it as the following:

1. for a person who only barbecues occasionally
2. for a person who doesn't have the space for a offset
3. for a person who wants a portable smoker
4. for a serious BBQ enthusiast who wants to prove to all of his BBQ snob friends that smoking meat is about the skill of the cook and not the price tag of your equipment, because, afterall, a skilled pitmaster with a smoky mtn can cook circles around the amateur with a Green Egg.

They work great. Check out the bbq brethren site for tips and posts by other WSM users. You can even hook up a digital controller on them to keep the temp perfect.

It's the original smoker. It'll definitely do it. I don't know many people that use them off the top of my head, but my mom does. She has a tendency to smoke the crap out of her ribs, and they end up tasting acrid. I'd dial the smoking back on this one, since you're hanging the meat directly over the heat source.

Then again, maybe mom just doesn't know how to smoke meat.
