It is Hollandaise. I love the stuff. Ever since I figured out how to make it in a blender I make it more regularly than I used to.

I like Eggs Benedict, but I've been messing around with it lately. I'll use fried oysters instead of eggs, shredded duck instead of ham...that kinda thing. There are so many variations it's crazy.

i don't drink. ever. so i don't know much about hangovers, but why is that a preferred dish for drunks? it certainly looks good. no doubt about that

You don't have to be a "drunk" to get a hangover. The "drunks" I've known don't seem to suffer from the effects of drinking too much.

But to address your question, some folks say a heavy/fatty (often greasy) meal helps you get over the effects of drinking too much.
