Ok,

We're getting a new book this week and trying to decide between one of Michael Ruhlman's books and Rytek Kutas.

Which one would you get:

Charcuterie: The Craft of Salting, Smoking and Curing

I know both are must haves but only can get one so which one comes first????

I have The Ruhlman book and swear by it. In fact, its sitting within arms length of me right now. Thing is, I'm not sure if I have ever followed an actual recipe from it. I read all of the information on charcuterie and then started using the book as a guideline for making charcuterie with game meats. The one exception is that I have used the Smoked Venison Salami recipe from the books sequel entitled "Salumi."

Both books seems to be popular with sausage makers. I did find this forum discussing charcuterie books, it may help you decide: http://forums.egullet.org/topic/131433-best-charcuterie-cookbooks/

One poster mentions that the Kutas book is exclusively focused on sausages for an American audience without much or any traditional European sausages. Landjager, Jagerwurst, Kiebalsa, Spanish Chorizo etc are all on my list this year. While, of course, I enjoy American and style summer sausage, it is entirely dismissive to learn the craft of Charcuterie and skip over the thousand year tradition of old world Europeans. The Ruhlman book has both old world recipes and American such as hot dogs. I say go with the Ruhlman book.

Thanks bro. I was already leaning towarding the Ruhlman book and you sealed the deal. I am doing 2 pigs this coming year and want to get read up over the winter on all the good things we will experiment with on this porkers!

I got mine last week. Do yourself a favor and try the brined pork chop recipe on page 64. Y'all raise any pigs over in the hollow?
