I have never been concerned but someone mentioned it needed to be frozen a minimum of 20 days to kill some of the bacteria since it wasn't going to be fully cooked.

.???? I never thought about it but it makes sense.

What organism could survive the curing and drying process? The answer? Nothing. No need to freeze it first.
