We keep it simple around here. My cornbread recipe:

2 c. home ground corn meal ( we buy it from a guy my brother works with)
2 tsp baking powder
1 tsp baking soda
1 tsp salt
1 egg beaten
2 c. buttermilk
1/4 cup melted fat or cooking oil

Combine dry ingredients, then add egg, milk, and fat. Stir until moistened, but do not beat. Pour into greased hot skillet. Bake @ 400 degrees for approx. 20 minutes.

I didn't realize just how terrible commercial cornmeal was until I started using "home grown". BIG difference.

Just got one of my grandmaw's old cast iron skillets today and you better believe some cornbread will be made tomorrow. And for what it is worth we will leave it in the skillet and cut it there. I might even get out a pack of blackberries from the freezer and make a cobbler this weekend

My mom always just flipped it out on a plate.
First cuts were always down the side, add butter and a little salt and WOW \:D
