I have to bust Deer and Deer Hunting out for promoting this product. The author freely admits to not understanding how Citric acid works on meat. Furthermore, the benefits are minimal (as in buys you minutes) with an irreversible effect on the meat. Think about marinades that contain citric acid. They actually cook the meat (ceviche, for example) through enzymatic change. Have you ever eaten a Vitamin C tablet? That's what the surface of your venison will taste like. Essentially, by spraying this product on your deer, you are exchanging a minimal amount of preservation for a permanent effect on your meat. Are we supposed to carry this bottle around in the field with us?

If hunters from the deep South can safely extract venison from the field during bow season, than most Eastern hunters should be fine. Possible exceptions would be retrieving big game out West or in Alaska where recoveries are long processes. In those cases, salt would be a better way to address meat spoilage over citric acid. Salt will prevent bacteria growth and pepper will keep the bugs off the meat.

1) Western big game hunters benefit greatly from milder temps and ultra-low humidities...big benefits for buying time in the field
2) Salt is heavy (and noisy if not packed well). How much do you propose using on a deer?
3) Refer back to the video a while back of the Italian butcher gutting a pig. Europeans rely heavily on fresh rosemary. It might be worth trying out.

Not saying I would carry salt for this purpose, but it would better than carrying a bottle of citric acid and it would actually work.

when I lived in CA i found that killing a deer at 4500 feet in August meant you had to debone and get on ice pretty quick. I have always wondered about those shows where a guy arrows an elk in 60 degree or hotter weather because that meat will sour pretty quick.
