Personally, I want to be able to vacuum seal entire quarters. My current method is to wrap the quarters in plastic wrap and then butcher paper. As I start filling up the freezer with various deer, I like to start freezing some large cuts to give myself more options later in the year.

It Should on most TN deer. Though, a whole buck neck probably won't fit. Even if you turned it perpendicular to the sealer, the 11 inch rolls are not wide enough to accommodate. Saddle roasts should be fine.

They are problematic. I don't have the $200 Weston, but, as a person who uses vacuum sealers extensively, I'd feel a lot better about spending $200 on a low end Weston than a $100 on a FoodSaver.

Lots. My Food Saver is an 11" model, and many times the bag's width isn't a factor so much for the meat's width as it is for the thickness. Picture a football roast.....relatively narrow, but bulky. In an 11" bag, it'll pooch the middle up too much, giving you trouble trying to get a seal.

We also have a lot of bag waste with grocery store steaks because we can't efficiently pack (2) strip steaks on top of each other without creating too much trouble.

The ziplock vacuum hand pump works better than any vacuum machine without spending way too much money. I have been using it for many years. Works great.

I purchased the Weston 2300 a few years ago. I have no complaints whatsoever. I would absolutely purchase another one of these.
