I have to admit, in the episode when he had that coyote split open and over the fire... it looked delicious.

I would just make jerky out of them. -bet you can't tell the difference between coyote jerky and any other kind of red meat jerky.

Off the top of my head, I'd say that, due to trignosis, coyote needs to be cooked to a 165 internal temp like bear. So, probably not. It would be an interesting taste to try, however.

If a bear tastes like what he eats, does a coyote taste like persimmons and rabbit with just a hint of rodent?

just don't eat the liver. If it is similar to dog liver it is toxic to humans. Some of the Arctic explorers found this out the hard way....

Had one come by my tree this morning, but didn't feel like messing with it.

I'd try it once. I agree that jerky is probably the safest approach from a flavor perspective.

I think I'd have to wait until winter to kill one just so I didn't have quite so many pests on the animal itself. Don't want to catch fleas while skinning one...

Their outside "spit" was very nice. Looks like lots of great meals have been cooked there.

I loved their hats. "Wilderness Athlete" Nice!

Several portions of that coyote looked really good. I would say our very own Poser could cook one up really good. \:\)

One question: Right at the beginning of the video, why did the dude finger that 'yote's butt? Then they went and ate it. \:D
