Uncooked yes, but fully cured and air dried. Similar to Prosciutto.

I just sampled my cut which is in the photo next to the knife and was fairly amazed at the complexity of the flavor. This piece of meat is like jerky times 100.

It's harder than a Chinese algebra test...one thin little slice, like Poser said, paper thin and the taste is amazing.

Yeah, in a pinch, you could use that hunk of meat as a weapon and knock somebody over the head. Or sharpen it to a point and have a fairly reliable shank \:\)
