You can also check Ebay for vintage knives. Someone gave me as a present a vintage butcher's knife they bought off Ebay. The insignia is completely worn off, but the blade if carbon steel and holds an edge far better than the contemporary Hinkels and Wusthofs. Thing is, if it is stainless steel and it is not the highest grade knife by the manufacturer, chances are that it is Chinese steel.

I have both Wusthof and Hinkel, each has their place with me. I've got to the point no mater what I'm cutting I reach for the right knife for the job at hand. The truth is you need to go to a store that sells them and will let you handle them.

Big fan of the Zwilling J.A. Henckels Pro-S series.

When I started cooking every day, I decided it was time to buy big boy kitchen knives. I figure if I take care of them they're something I can pass on to my kids.
