I hate crappy knifes and since I have started to do more and more of the cooking at home I figured it is time to invest a little bit. What do you guys use/suggest for your cutting needs in the kitchen?

It looks like there a ton of options out there so I figured I would check here and see what you guys suggested.

My sister gave me a Wusthof when she got out of the restaurant biz about 12 years ago and it's still gets things done in the kitchen.

I have an expensive set of Wusthofs and a couple of Hinkels, however, if I had it to do over, I would go with high carbon steel over stainless any day of the week. Don't buy complete sets. Rather, buy yourself a carbon Chef's Knife and a carbon boning knife then go cheaper on the pairing and other specialty knives. Stainless steel can be a pain to keep sharp.

Since Henkels are pretty well available anywhere now, I don't think their quality is as good as it used to be. I think Wusthof's are still high end.

Cooks Illustrated put together a pretty sweet list a while back of their Top Picks knives. This is the "set" on Amazon. Since you have to be a member to see just about all their content, there's no point in even trying to link the C.I. site.

Shun Ken Onion 8" - this one holds a very nice edge over the long haul

Wusthof 8" Filet - holds a good edge but is prone to dings in the blade if you get after the rough stuff. Its a workhorse

I will say that my Wusthoff boning knife keeps a better edge than my Hinkels, but still, for the Chef's knife, go carbon steel.

So far I have started with this, 8"chef knife . It looks like it is high carbon steel so that should be a good start. Will definitely be adding individual pieces as time/money allows.

This may sound a little odd but I have bought a few J. Russell Green RIver Knifeworks knives from EBAY. I look for and buy the old ones. Typically the woods handles are not in that great of shape but the blades are awesome. If you buy the old ones, you will need to clean up the blades a bit but they turn out razor sharp. Buy the ones with the logo etched in the blade, not screen printed on.

I have a couple Shun's and they are superb. For a great budget set
a friend of mine turned me on to Forschner Victorinox. You can get a set for around $200 and they are a really good knife.

I have a large Victorinox butcher knife, very good for steaking out ham's ,razor sharp & holds it well, knife works sharpener will keep all of your knifes in tip top shape no matter what kind you own.
