I'm looking for a good resource (book, video, etc) that covers processing wild game.

I've been processing my own deer for a couple years now, I'm just looking to take it to another level. Making stocks, using pieces like shanks, ribs, etc instead of burgers or tossing them...

Also something that covers processing hogs, turkey's, etc would be a bonus.

There is not one single book that is great specifically for wild game, but you can patch together a couple of books that collectively cover everything you need to know. Rumor is that Steve Rinella is working on a Hunter's guide to butchering book.

Basic Butchering of Livestock & Game written by a veterinarian. Informative and helpful. Covers small and large game. Diagrams, no photos.

Afield: A Chef's Guide to Preparing and Cooking Wild Game and Fish Excellent, excellent book. I can't say enough about this book. It has some of the highest quality game butchering photos out there including deer, hogs, turkey, fish and more, even though it is a cookbook.

Whole Beast Butchery: The Complete Visual Guide to Beef, Lamb, and Pork -No game in this book and a more advanced program, but excellent overview of butchering with super high quality photos.

I'm a big fan of Steve Rinella too. When I am done with my Grad program I plan on reading his books. My DVR is filled with meat eater episodes that I'm keeping because he butchered a hog or braised something...
