I bought some Apple chunks would u throw some of those in there as well??? Just prepared my ribs for the kickoff to the rib cook off starting at noon tomorrow...

Soak the wood in water for a few hours so it won't just burn up quick and smoke longer.

And don't forget to pull the membrane off the back of the rib before rubbing it down.

There are a couple of good ones on here of you will just scroll thru some of the threads.
You can find some good ones in the store...usually around the meat counter.

Well put them one the grill at 1 with the temp still holding at 200... Put some Apple wood chunks on there also. Long process...

Instead of banking the coals on one end of the grill and cooking on the other end, I put a pan of water in the middle and bank the coals around the pan. Steam cooked over the water allows the meat to absorb the smoke, remain moist, and prevents burning the meat over direct heat. When I want to sear the meat with sauce I just move it onto the grill over the coals. I also baste often with apple juice. This method is also great for cooking chicken, hot wings, or any other type of meat that may have a tendency to burn on the outside before the inside has a chance to get done.
