Great bugling on 9/3... but that was only because the herd 6x and a satellite 6x were challenging each other from 800 yds apart.... each bugled about 15-20 times during the morn. Other than that day, it was still pretty quiet (typical for opening weekend).

I spent the weekend processing all the meat (and eating some \:\) ). I ended up with 30 lbs of pure deboned, ultra trimmed ground elk outta each ham. Another 10 lbs of trimmed backstraps each. The shoulders I sawed in half (for a picnic ham and boston butt) and just left them as whole bone-in roasts. I cooked one picnic ham and it completely filled a large green egg. Smoked the sucker at 225 deg for around 6.5 hours to 140deg internal temp. Was better than any roast beef I've ever had!

I pulled the pyramadilis muscle outta the ham this evening and made small grilled medallions that I sliced and topped over a green salad. I added a few wild mushrooms I picked up in the woods in Colorado to top it off and it was the best salad ever!

In total, I ended up with around 80lbs of steaks and high quality ground elk, another 3 lbs of tenderloins, and another 50lbs or so of bone-in shoulder roasts. Basically, one ham netted as much pure meat as an entire whitetail. Good eats for the next couple months!!!

Oh, and the bull ended up being only 2.5 y/o after I pulled the jawbone and boiled the skull. woulda been a heckuva elk in another 3 years :)... but no regrets, I'm still tickled pink no matter his age!

Already looking forward to next year's hunt!
