My in-laws next door neighbor had a smoker sitting outside with a for sale sign on it.

I stopped and looked at it.
It is a Brinkman charcoal smoker and the middle "section" is brand new.
They said it came with two "barrels" and one extra rack.
So the part in the middle is new and one rack is new.

I am excited.

Didn't figure $30.00 was too bad.

Now I gotta learn how to cook ribs and boston butts \:D

Start with butts - they are hard to screw up.

Look up the 3-2-1 rib method, I find it is easy to get started with and also turns out some GREAT results.

I prefer to smoke with fruit woods rather than nut woods - but everyone has their preference.

Yea I was sold on hickory until last time I went to the store to get some chips. They were sold out of hickory and I didn't feel like going elsewhere so I picked up a bag of cherry. Turned out fantastic and I believe I like the flavor even better than the hickory.

My favorite wood for butts is Pecan. Much milder than hickory(which is overrated IMO).

I have a couple of those Brinkmans a chorcoal, an electric and my favorite is converted propane. I took a fish fry burner and welded a little steel on it so that I could sit the barrel of the smoker over the burner. It works best because you can easily regulate the temp. I use an iron skillet lid upside down to put my wood chunks in. It works beautifuly.

Cherry didnt penetrate as good as hickory for me. No smoke ring on my brisket and overal just not a real smokey taste. Not a fan of cherry for beef although it might be great for chicken??!!
