Then go to One & Only BBQ in Memphis. The texture of the meat is great, the dry rub is great, the sides and desserts are great, but there is no woodpile, no smoker, no smoke ring and no smoke taste. The fact that a BBQ place can get away with this in Memphis, mere blocks from Corky's, where smoke pours freely, is a sign of the times with regard people's definition of BBQ. If it can happen in Memphis, it can happen anywhere. Stay vigilant out there, boys.

In order to undo that smokeless experience, I plan to hit up Scott's BBQ, one of the last bastions of whole hog BBQ, in Lexington this Thursday.

Scott's is one of my favorites. Been stopping there well since Mr. Scott ran it. He only sold bbq on Fri and Sat. When he ran out he closed til the next Fri.
Now they start selling on Weds.

On a side note just in case you need to expand your bbq experiences there a little place at Scott's Hill that used to do whole hog. Not sure if they still do though. Fri and Sat.only and Jerry's in Lexington has been at the same location as long I recall.

I understand that ast Scotts, you can request specific cuts of meat. Is that right? So, I can go in there and ask for cheek meat with generous amounts of bark?

I was in Scott's Hill not that long ago...I will definitely have to find that place if it's still open!

Not sure about that. You can request it with more bark pulled or chopped and so on. Trying to remember if the heads are even on the hogs. Seems like there would be a better use for the head rather than Q.
I was once there early enough to get an order of whole hog ribs. They were tender moist and greasy in a good way. The locals snarf these up most of the time.

Oh! Sometimes the pulled sandwich can be a little dry. Though still better than most.

But when you go out for BBQ, you expect it to be wood fired, right? The difficulty of doing bbq right is what you are paying for.

Might as well do it in your oven. If you know what you are doing you can get a smoke ring in the oven.

BBQ is Smoked with fire not a cooked with a 220 outlet.

My buddy has a pride & it makes great bbq with no effort.mine needs reoaded a few 4 times for a whole brisket or big cuts.im not sure that many folks could tell tell the difference in the pride though.I went on a run this past weekend to ky for a savage muzzleloader.found my self at martins bbq south of nashville.decent bbq & the sides were really good.the white sauce on the pulled chicken was great & need to find me a copy of it.wife had dry rubbed babybacks & I had the spares.they dumped too much rub on hers after it was cooked so it had to be brushed off.mine was ok per the rub.the rub tasted like a commercial 1 I have used but discarded due to a strong taste.I will go thru my stock & find out which 1 it was.Id eat there again but not drive 5 hrs to do it lol

If you're going through Lexington...go on down the road to Parsons. Take a right when you get to Hy 641/69 and go down about 2 miles and stop at Jerry's. It will be on the left side of the road. You won't be disappointed....
