RIP Mark Newman. Pork supplier to many resturants throughout the country.

I think Poser used many of his products.

That is a bummer. I get Lard and Fatback from Newman farms for sausage making and cooking. I saw him just 2 weeks ago at the Farmer's market. Heck of a nice guy and sure was passionate about Berkshire hogs.

Was the fatback fresh or cured from Newmans? I buy cured fatback and streak of lean from Westside grocery in Covington. Tn.
They cut the whole belly up and pack it in smaller parcels.

It is the real thing.

I buy it fresh, which is ideal for sausage making. I had a bit left over from my last batch of sausage, so I'm experimenting with curing the fatback i.e. "Lardo" right now.

Newman has their lard rendered at Yoder Bros. I've never been to Yoder Bros, but I'm guessing that they sell Newman farms lard since they render it.
