I purchased 20 pounds of coated Ladino clover from Co-op 2 weeks ago. At the time, I was under the assumption that coated meant that it was inoculated but now I'm not so sure. What exactly does coated mean? Will I still need to inoculate before planting?

If it is coated, it is probably pre-inoculated. It is ready to plant but you may want to use a slightly higher seed rate since it is not being inoculated at planting. I always use pre-inoculated clover and have never had a problem.
