I like to remove all the bones, then cut the meat into "chicken strip" size pieces. Dip in milk, then roll in a 50% mix of regular flour and Aunt Jemima pancake mix. Then fry it up much like you might chicken or catfish. Salt & Pepper to taste.

Delicious!

If at all possible, the possum usually tastes better if you can feed him nothing but corn for about 3 days before "harvesting". Never really know what they've been eating, and the "corn fed" ones are usually the better eating.

So next time you set a trap for the neighborhood cat and catch a possum, ENJOY! \:\)

I have a 1960s edition of The Joy of Cooking which has an entire chapter of wild game dishes (these chapters were cut out of the later editions). Anyway, the possum recipe calls for keeping it in a cage on a diet of oats for 2 weeks.

You can purge a wild animal with several foods.I wouldn't eat a nasty [censored] possum if he ate lobster for a year.A groundhog is another matter.

Possum is better than groundhog. Groundhogs have an "earthy" dirty taste to them.

And you'd be surprised what you might enjoy eating if you were hungry.

We've been socially conditioned to only eat or not eat certain things. But when you get right down to it, other than size, not a whole lot of difference between a possum and a pig.
