A few weeks ago, I smoked some chicken wings coated in a variation of my pork rub. They were good, but came out looking like they were charred due to smoke and sugars in the rub turning the color of coal due to poor temperature management. They tasted great and weren't the least bit burned, nor did they have a burned taste, but I like food to look good. So, I made some changes.

First up, I increased the brown sugar content as well as the red pepper content of the rub. I wanted sweet and spicy. I put the rub in with the wings and let them sit in that for 4 or 6 hours. Can't really remember how long.

Then to the Weber. Still using chunks of hickory from a tree that fell at the farm.

After half an hour or so, I added more rub to the wings and let them continue smoking.

After a grand total of just under an hour and a half they had the color I wanted and all the smoke flavor I intended. They came out just like I wanted. Sweet, spicy, and smoky. And pretty to look at.

Right on!

I've taken to smoking my wings first, then finishing them in a 450 degree oven so that the skin will crisp up. It's the next best thing to some good fried ones.
