Yep.

For those who are tndeer younglings - or tndeer elders with dementia - back in the day we would make a 'milestone post' at every 1000 posts we accrued. The post was about whatever you wanted to post.

Well, I've got to lucky-13 and here's my 13th milestone. It's something my begat Sassy and I came up with one day awhile back when we were just hanging out together.

SASSY’S CHICKEN & RICE
Oh YEAH!!!!

Marinade:

A cup or so of fat-free greek yogurt
1 tablespoon fresh ginger - grated (I use microplane)
3 cloves garlic (I use press, but you could dice real fine)
About a pound of boneless, skinless chicken thighs

*Poke holes in chicken thighs with fork. (Not sure about this step, but Sassy said it was extremely important to do this. \:D ) Mix marinade up and then put chicken in and coat real well. Marinade overnight in fridge.

Pull chicken out and let get to room temperature...then the BEST way to cook is on the grill to get some char = FLAVA!!! But, if you must, place chicken under broiler for 6 -7 minutes per side to get that char.

While that's going on, make the sauce and rice.

Rice - heck, just get ya some brown rice and follow directions on box. Only thing I'd add is some cilantro and mint - that's a secret...anytime you cook with cilantro, throw some mint in with it!

Sauce:

3 tablespoons butter
2 tablespoons olive oil
6 colves garlic - pressed or finely minced
2-inch of ginger - peeled and then minced (I use microplane)
2 tablespoons tomato paste
2 teaspoons paprika
7-8 Roma tomatoes - diced
1 1/2 teaspoons sea salt
2 cups chicken broth
1 Anaheim pepper, seeded and minced
Fresh cilantro leaves - minced

Whew! Now....

Take a large skillet and put it over medium heat...add butter and olive oil. When melted, add the garlic, ginger, and anaheim pepper. Saute until lightly brown.

Add the tomato paste and cook until the paste is dark - say maybe 3-4 minutes. Add the paprika and cook another minute or so. Now, add your roma tomatoes, salt, and chicken broth. Bring to a boil then turn the heat down to a simmer and cover. Cook this about 20 minutes.

Ok...ok...

Take the chicken off grill - or out from under broiler - and nestle all the pieces in your skillet of sauce. Cover and let simmer around 15 or 20 minutes just to make sure chicken is cooked and to let all them flavors to mix!!!

Remove from heat, let everything rest for about 5 minutes...if you can wait that long...then spoon out some rice on a plate and place chicken with sauce on top.

Congrats on making it this long buddy! I thought for sure you were gonna buy me breakfast when you were over working on the plots the other day, but alas, I knew better. \:\/
