I'm wanting to start my little girl off squirrel hunting this fall but I really don't like the meat. I don't like killing if I'm not eating or ridding the world of some pest. I'm located between Chattanooga and Knoxville.

You will be ridding the world of a pest... Tree rat.. Seriously though , I agree with what you are doing, when I take my daughter hunting (she is 1 year old now ) I will make sure I teach her that you need to not let what you shoot go to waste. You should try pressure cooking the squirrels them frying them. It really helps with taste and texture.

I grilled some last Thursaday with Montreal Steak seasoning and BBQ sauce and they were absolutely delicious!

There are other ways besides pressure cooking. I never use a pressure cooker. I brine them and then marinade them. Pressure cooking zaps the meat of natural flavors as well of minerals.

I have not cooked squirrel in a long time. But the last I cooked was pretty good. I boiled the squirrel in water and butter for a few minutes. Then browned them with some bar-b-q sauce on a charcoal grill.

Cant remember for sure but I may have put a little salt on them before boiling.
