Over the last several months, I have increasingly been using pork lard (rendered from free range, Berkshire hogs) for supplemental fat when cooking wild game. For a long time, bacon has been the standard issue supplemental fat that hunters use when cooking wild game. Smoking venison? Cover it bacon. Grilling duck? wrap it in bacon. Squirrel meat? wrap it in bacon.

While experimenting with dishes for the world Squirrel Cookoff, I got really frustrated with bacon, even uncured bacon, dominating the flavor of the meat. After experimenting more with pork lard, I have found it to be completely neutral in flavor, almost undetectable, leaving you with a much more natural tasting meat, while adding the desired amount of fat for the cooking process.

Poser, where might you get your lard? A butcher, processor???

If you have a local butcher shop, they should have it. If not, check with you a Mennonite at a farmer's market. The one in Dickson has it.

I get it from Newman Farms at the Farmer's Mkt.
