-been fishing a lot this Summer. Here are some recent meals:


Grilled Catfish and Collard Greens. I tried a Jerk season on the Catfish instead of the usual Blackened season and it was excellent. In fact, I'll probably defer to this seasoning for grilled Catfish from now on.


Baked Rock Bass with Fried Green Tomato and Sautéed Veggie Salad.


Oil Poached Crappie and Summer Vegetable "Salad". I've always wanted to try this. You heat Olive Oil to 160 degrees, turn the heat off, place the filets in the oil and cover for 1 hour (we used a cast iron dutch oven). The filets "poach" in the oil and will fall apart upon removal. -sauteed fresh corn, garlic and scallops in the oil and added tomato, cilantro and lemon juice.


This was "breakfast" on Saturday morning. Scaled and gutted a largemouth bass, cut 3 slits on each side, rubbed with seasalt and grilled. -great way to cook most any fish, especially when you don't feel like filleting or have a smaller fish and want to maximize the yield.
+ 3 crappie filets with salt & pepper.

Looks very good, I too am fan of whole-cooked(well usually headless) fish.

Anyway, I find it comical how some fishermen get up in arms about eating bass. They act like you just strangled a puppy or something. If people want to spend $60,000 on a bass boat, fish with $800 rods & reels, dress up like a NASCAR driver and not eat any of the fish they catch, that's their business, but I'm eating appropriate sized bass because it is freakin' good.

Funny you mention that.
I ate a few bass last year and honestly I much prefer bream.

Can't say I really cared for the bass.

I eat NEARLY everything I catch! Hahaha. I draw the line at gar and skipjack. Have eaten a drum. Was actually pretty good.
