The boys in the holler killed a goat today and it is quartered in the fridge. I got the call that there is no consensus on how they want to cook it so I'm taking charge.

They want to cook it in a Cajun microwave

I was thinking of something low and slow almost a barbacoa type dish. What do we think?

-cant argue with Barbacoa. I've never heard of the Cajun microwave method for goat. I'm sure it can be good, but wonder if there is enough fat for that method. I have only seen it with pigs.

I was guessing I'll have to keep it real low if it will work. I haven't used one of these cookers before but it looks like a decent set up

Here is a barbacoa recipe for lamb that I want to try. Should work for goat:

http://www.patismexicantable.com/2012/02/lamb_barbacoa_in_adobo/

It's designed for the oven but could be adapted for outdoor cooking. My grandfather told me that when he was a kid they fixed a goat every 4th. I'll be interested to see how it turns out for you.

If we didn't go barbacoa, what do y'all think about a simple rub and just cook it slow? I'm running out of hours in the day and don't know if I have the time and energy for the whole barbacoa deal

Do you mean smoke it, or roast it? If roasting, what method?

Roasting, they are set on this dang Cajun microwave so I'm tied to a roasting scenario
