With the surprisingly cool weather over the weekend, a buddy of mine decided to have a BBQ on Sunday. We met up early in the morning and got ribs and venison shoulder going, roasted some squirrel for breakfast and commenced to drinking beers. Our mid-afternoon snack was Duck Confit along Duck Gumbo with smoked sausage and shrimp. Then, we moved onto the pork ribs and venison shoulder.

The Venison shoulder was rubbed with pork lard and then a layer of dry rub. -came out great with excellent smoke ring.
