I was craving Viking grub, so I made gravlax for the first time out of some salmon I caught last month. It was really easy to make and it's absolutely delicious. If you love salmon I highly recommend getting your hands on a filet and giving it a try. There are lots of recipes and videos online showing how to make it.

I think I saw something like that on DDD one time.....salt, sugar, and herbs on the slab of salmon, in the fridge for a couple days, right?

Yep. Kosher salt, sugar, black pepper and chopped fresh dill are standard ingredients. My recipe called for a little vinegar, but most of the other recipes I saw did not have vinegar in the cure. Coat both sides of the filet with the cure in a glass dish, cover with plastic wrap, set something heavy on top, flip every 12 hrs or so. Wait 24 - 48 hrs, rinse the filet, pat dry and enjoy!

I can't believe I'm going to say this, but I think I might like it a little bit better than smoked salmon. Plus, it's easier to make.
