I got no problem with eyeballs. I've eaten them off whole hogs before. They have a "salty bread" taste (its weirdest thing that they taste like bread). I've never eaten deer eyeballs, but wouldn't expect much difference. -I'll get back to you on that.

Brains: I do have a cookbook that has a recipe for venison brains, though, I've never eaten them and don't have any immediate plans to. Maybe after I get bored with roasting the heads and start going to the trouble to clean the intestins for sausage casings..... then, I'll mess with the brain.

The other thing on my Bucket List for this year is a head shot and bleed a deer out for blood sausage. \:\)
