My uncle raised them when I was a kid, 30 years ago. Guess it took a while to become the new thing to do.

Never had rillette till a year ago and boy have I been missing something. That's some good stuff.

I am contemplating a small hutch in the barn to run some rabbits over some worm bins. I am not much for eating caged animals but short of shooting them in the wild it ain't easy to "free range" bunnies.

Its the lack of fat that will get you. People get protein poisoning trying to live off rabbits. If you were trying to survive, you would need to eat the brains and offal. However, Americans get plenty of fat in our diets, so most Americans could eat Rabbit as their only source of meat and be perfectly healthy.
