I normally hang my deer in a walk-in cooler, leaving it from 10 to 40 days.

Sometimes however, a walk-in is not available. In that case, how long would you leave your deer meat on ice, in a cooler (draining the thawed water twice a day and adding additional ice)?

i leave the drain open so the meat don't sit in it. i would keep it on ice as long as i would in a walk-in.

As long as it's staying cold, I'm fine with it. I will often process the deer over the course of a week, but then I'm not really letting it sit to age; just a matter of timing and convenience for me.

I throw mine in bags in regular fridge for a week and then use and freeze. I've had yearling buck t-loin straight from the deer and I've had mature doe hams/backstrap aged several days and the fresh t-loins were tougher. Maybe just that one experience but i think the week in the fridge makes the meat better.

I finally got a big cooler (70 qt) with a drain hole so I can try the ice method this fall.

Ice is fine as long as the drain is open. However, I use either cold packs or water frozen in bottles and placed all around the meat.

I have come to like this with boned out meat even more than hanging a whole deer. I usually leave the meat in the cooler for three to four days, then cut and wrap it. Works quite well.

I always leave mine 4 days on ice then I cut it up.im pretty picky about it being 4 days too!
