No bones in the fillet at all! It is really good clean white meat with no bones when you fillet them at all.

Try them on the half shell. Sprinkle some cajun seasoning and garlic powder on them and a little butter. Then grill it scales down until done and sqeeze lemon on top.

No Joking, no trick. I can't say about anything over about 3 lbs yet but the small ones are great. I'm not sure why people don't like them or why they got a bad rap. Same way with Buffalo, there is not much to eat on them but the ribs but they are worth all the trouble.
