I need a good hushpuppy recipe.
I will probably cook up some bream this week and have never mixed up any batter.

Not TOO complicated either, I ain't real bright. ;\)

The best recipes involve sweet onion. It carmelizes within the batter and adds a flavorful sweetness. I don't have my recipe handy because I'm out of town, but the bones of it are 1 large yellow onion diced, a cup of rising corn meal, a cup of flour, one or two eggs, a diced jalapeno, and half a cup of sugar. You can use water for the batter, but milk is better. Make sure it's thick enough to stick together when dropping in the oil (and the oil should be HOT before starting). If the batter falls apart, add a bit of flour and meal to thicken.

Deep fry until golden brown, turning once as they float to cook both sides.

Note - leftover hush puppies can be re-heated in the oven with decent results.

Ingredients
6 cups peanut oil
1 1/2 cups self-rising cornmeal
1/2 cup self-rising flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 small onion, chopped
1 cup buttermilk
1 egg, lightly beaten

Directions


Using a deep pot, preheat oil for frying to 350 degrees F.

Using a mixing bowl, stir together the cornmeal, flour, baking soda, and salt. Stir in the onion. In a small bowl, stir together the buttermilk and egg. Pour the buttermilk mixture into the dry ingredients and mix until blended. Drop the batter, 1 teaspoon at a time, into the oil. Dip the spoon in a glass of water after each hushpuppy is dropped in the oil. Fry until golden brown, turning the hushpuppies during the cooking process.

I actually don't care for onions in my puppies. Jalapeno's are permitted.

I don't mind onions in mine, jalapenos are good too. My wife has even tossed in some cheese a time or two. She's talked about tossing in some chopped crwfish, but I think then they are taking on more of a fritter concept than a hushpuppy.

HUSHPUPPIES

1 1/2 cups self-rising cornmeal

1 cup self-rising flour

1 can creamed corn, 15 oz.

2 large eggs, slightly beaten

1/2 cup onion, finely chopped

3/4 to 1 cup frozen corn kernels

**2 TBS canned diced jalapeno peppers, drain well on paper towels

add peppers to taste, use whole can for very hot

4 TBS sugar

1/2 tsp salt

1/4 tsp fresh ground black pepper

mix first four ingredients in medium mixing bowl until blended, fold in remaining ingredients, let stand for 5 to 10 minutes before cooking or make batter and refrigerate before cooking.

Sometimes my Aunt would add a little corn or green pepper to make them a little different. They were always good. I do prefer onion in mine. They are just better. \:\)

I have made a recipe I found online where you dice up yellow (sweet) onions and mix in batter. I don't have that recipe any more, but I might use one of these cause we are doing a fish fry this weekend with the bream I caught and hushpuppies are on the menu.
