WHOLE HOG (by Joe York, 2006) is a paean to the barbecue pitmasters, hog farmers, and butchers of rural western Tennessee, who everyday transform the lowly hog into the edible embodiment of two of the greatest human virtues, patience and hard work.

At the core of the story is whole hog stalwart Ricky Parker, pitmaster at Scott's-Parker's Barbecue in Lexington, Tennessee.

Ricky Parker passed away on April 27, 2013. He was 51.

RIP. just showed a couple of guys our open whole pig pit last week and it got me all fired up to do one before summer set in. sad to see legends go...

Not a whole hog, but I cooked 86 Boston Butts for the football team fundraiser this past Fri. nite. I'm still tired.

i love whole hog bbq. seems hard to find in these parts. have had it a few times in LA- lower alabama (mobile area)

this place is run by a black family. all of em big enough to sale shade- nice as they can be and they whole hog every friday and saturday. bring it out chop it up, add the sauce and spices right in front of you. i will look up the name.

My family used to cook a whole hog every 4th of July. It's a lot of work sitting up all night and tending a fire. Loads of fun though. I'm gonna build a pit at my river house when I retire up there next year and cook a whole hog at least once a year for friends and family...maybe a goat too, who knows. \:D \:D

There is just no beating whole hog BBQ. The complexities in flavor from the fat pooling as well as choosing which cuts you want.

I know a few people up in that area that cook whole hog occasionally. Its a tradition that has been passed down but slowly dying away.
