I'm thawing several goose and duck breasts. Any good ideas on what to do with it?

Unless somebody has a better idea I'll brine it really good and smoke it with applewood.

Be careful smoking them, once they start drying out, they'll dry out quick. For future planning, you'll have way more options for breasts with the skin on since it is so full of fat. For skinless breasts, I usually use them in gumbo or grind into sausage because they are difficult to cook with unless you are making "poppers", which I'm not really a fan of for wild game. -not that they don't taste good, just doesn't taste like game meat.

Ok, thanks for the info.

I'm a big fan of poultry skin. I was given a grocery bag full from one of our fire department secretaries a while back. THey came packaged skinless with wing attached.

The #1 way everybody I know cooks them is to maranate in Italian dressing and allergo maranate over night. Then wrap in bacon and grill them till the duck meat is med or a little less done.

You can also pound them out flat to tenderize them and flower or bread them like a chicken fried steak and make some gravy with the Pam drippings and have a awesome meal!

That's my 2 fav ways to cook them.

Goose is a little more gamey and a lot of people make jerky with goose breasts. If you have a lot you could make jerky with both the ducks and goose.

I like to cut them into chicken nugget size pieces, bread them and deep fry.

Another outstanding method for the nugget size pieces is to marinate them in a soy sauce-based sauce or marinade. A lot of guys in the Camden area use Dale's, but I prefer a marinade that doesn't have MSG as an ingredient.

The vinegar/oil based marinade wrapped in bacon and grilled is also outstanding.

I kept them all in the freezer except for one large duck breast and one large goose breast. I put them in the brine late last night with the rabbits. I think I'll take everybody's advise and go the "popper" route. I've got about 4lbs of inside tenderloins thawing to chunk and wrap with bacon, jalepeno, and cheese.

I'll let you know how it turns out.

I don't do Italian dressing and Dale's recipes.... I much prefer to taste duck when I eat duck
